It is said that the nation with superior culture drinks delicious Sake. The sake is a traditional product, made by wisdom of the Japanese nation, and of which Japan can boast to the world.
There is "Parallel Combined Fermentation System" which makes the conversion of starch into sugar by koji simultaneously with the fermentation of alcohol with yeast.
In the brewing, beer is made by "Combined Fermentation" which allows wheat altered into malt sugar to ferment.
Wine is made by "Single Fermentation" which allows materials to ferment as they are because they have much sugar.
We have been producing unique sake by adapting "Triplex Additional Brewing System" which ferments safely by adding three-separated ingredients at regular intervals in sequence, Also, there is pasteurization by "Hiire" discovered some hundred years ago from the Pasteur System.
Furthermore, it is not too much to say that the sake is made under a producing system which is naturally influenced by the climate of the four seasons and Japanese life style.
